The Hartley Ranch story begins on the open plains of Texas, where the Hartley family has raised cattle for over three generations. What started as a modest family homestead grew into one of Texas's most respected Black Angus operations — built not on shortcuts, but on a deep respect for the land and the animals it sustains.

The family patriarch established the ranch with a simple belief: that the quality of beef begins long before it reaches the kitchen. By raising cattle in wide-open pastures, feeding them on natural grasses, and allowing them to mature at their own pace, the Hartleys developed a herd that consistently produces some of the most well-marbled, flavour-rich cuts in the Lone Star State.

Today, that same family commitment drives every steak that lands on the table at Hartley Ranch Jaco. The move to Costa Rica's Jaco Beach was a natural evolution — a chance to share the ranch's exceptional beef with the world, without compromising the standards that made the Hartley name worth knowing.

Why Black Angus?

Black Angus cattle are prized worldwide for their genetic predisposition to superior intramuscular marbling — the fine web of fat that melts during cooking to create that buttery, rich flavour serious steak lovers seek. Unlike commodity beef, Certified Angus Beef® must meet strict standards for marbling, size, and maturity before it earns the designation.

At Hartley Ranch, our pasture-raised approach adds another layer of quality. Cattle that graze freely on natural grasses develop deeper muscle tone and more complex flavour profiles than feedlot-raised alternatives. The result is a steak with natural depth — one that speaks for itself with minimal seasoning.

From Texas to Your Table

Every cut served at Hartley Ranch Jaco is sourced directly from our Texas operation and air-freighted to Costa Rica. There are no intermediaries, no compromised cold chains, and no substitutions. When you order a ribeye or filet at our Jaco Walk table, you are eating the same beef our family has raised and been proud of for decades — nothing more, nothing less.
